การออกแบบตามหลักสุขลักษณะ

การออกแบบ การสร้าง และการติดตั้งอุปกรณ์ในโรงงานผลิตอาหารตามหลักสุขลักษณะ เป็นการออกแบบให้อุปกรณ์และโรงงานสามารถทำหน้าที่ด้านวิศวกรรมได้อย่างสมบูรณ์ ดูแลรักษาและทำความสะอาดได้ง่าย เพื่อป้องกันการปนเปื้อนและควบคุมคุณภาพของผลิตภัณฑ์ตามที่กำหนดไว้ บางครั้งความต้องการด้านการออกแบบตามหลักสุขลักษณะอาจขัดแย้งกับฟังก์ชันการทำงานของอุปกรณ์ ข้อสรุปของการออกแบบควรพิจารณาภายใต้ความเสี่ยงด้านความปลอดภัยของอาหาร การออกแบบที่ไม่ถูกสุขลักษณะ อาจมีสิ่งตกค้าง (soil) สะสมอยู่ในร่อง (crevice) และบริเวณพื้นที่อับ (dead area) ซึ่งจุลินทรีย์อาจดำรงชีวิตและเพิ่มจำนวนได้ นอกจากนั้น สารทำความสะอาดและสารฆ่าเชื้อ สารก่อภูมิแพ้ สารหล่อลื่น และสารอื่น ๆ ที่ตกค้างอาจเกิดการปนเปื้อนไปกับผลิตภัณฑ์ในระหว่างกระบวนการแปรรูปและการบรรจุ และอาจข้ามไปสู่ผลิตภัณฑ์ในรอบการผลิตต่อไปได้ และยังเพิ่มความเสี่ยงของการกัดกร่อนต่อตัวอุปกรณ์ ในกรณีของอุปกรณ์ปลอดเชื้อ อุปกรณ์ต้องออกแบบให้รองรับการฆ่าเชื้อแบบสเตอริไลซ์ได้ และต้องป้องกันการผ่านเข้าของจุลินทรีย์ (เช่น แบคทีเรียต้องไม่สามารถผ่านเข้าได้) รวมถึงต้องสามารถติดตามและควบคุมการทำงานทั้งหมดที่วิกฤตสำหรับความปลอดภัยของอาหารได้

ข้อกำหนดของอุปกรณ์และโรงงานตามหลักสุขลักษณะ พิจารณาจากความสามารถในการทำความสะอาด การป้องกันการผ่านเข้าและการเจริญของจุลินทรีย์และสัตว์พาหะ การป้องกันการปนเปื้อนจากสิ่งแปลกปลอม การปนเปื้อนทางเคมี และทางชีววิทยา และความสอดคล้องกับข้อกำหนดอื่น ๆ เช่น ข้อกำหนดเรื่องความปลอดภัยของผู้ปฏิบัติงาน และมาตรฐานการออกแบบทางวิศวกรรม เป็นต้น

เกณฑ์การออกแบบและการสร้างอุปกรณ์และโรงงานตามหลักสุขลักษณะ ประกอบด้วย

  • วัสดุโครงสร้างที่สัมผัสอาหาร เช่น โลหะ โพลิเมอร์ อิลาสโตเมอร์ วัสดุประสานและวัสดุซีล สารหล่อลื่น ของเหลวส่งผ่านสัญญาณ และวัสดุฉนวนความร้อน เป็นต้น
  • ลักษณะพื้นผิว
  • การเชื่อม
  • ความสามารถในการระบายออก
  • การสร้างสภาวะฉนวน
  • การติดตั้ง โครงสร้างรับแรง และการจัดวาง
  • การบูรณาการอุปกรณ์ต่าง ๆ เข้าด้วยกัน

แนวปฏิบัติ EHEDG No. 8 (EHEDG Guideline No. 8) มีเนื้อหาที่ครอบคลุมข้อกำหนดด้านฟังก์ชันการทำงาน วัตถุประสงค์การใช้งาน วัสดุโครงสร้าง การออกแบบและการสร้างตามหลักสุขลักษณะ โดยแนวปฏิบัตินี้ใช้เป็นพื้นฐานสำหรับการประเมินการออกแบบอุปกรณ์และเครื่องจักรตามหลักสุขลักษณะ ซึ่งการนำข้อกำหนดด้านสุขลักษณะมาพิจารณาตั้งแต่เริ่มออกแบบจะช่วยให้อุปกรณ์มีประสิทธิภาพมากขึ้น เนื่องจากการปรับปรุงแบบที่มีอยู่แล้วอาจมีค่าใช้จ่ายที่สูง และอาจไม่บรรลุวัตถุประสงค์ ประโยชน์ที่ได้รับไม่เพียงแต่ความปลอดภัยของผลิตภัณฑ์ แต่ยังรวมถึงการเพิ่มอายุการใช้งานของอุปกรณ์ ลดมาตรการในการบำรุงรักษา เพิ่มความยั่งยืน และลดต้นทุนการดำเนินงาน
